If you are anything like my husband Mike, when you hear the words Cauliflower Pancakes, the word YUCK comes to mind. Let me tell you Mike went from yuck to yum pretty quickly and I hope you do as well.

This is a simple easy-to-alter recipe. You can adjust the spices to your taste buds. I love these little guys with guacamole. Today for breakfast I had one and added a sunny side-up egg on top. It was not only yummy but it was also very nutritious.

Eating cauliflower offers numerous health benefits. It is low in calories but high in nutrients, making it a great addition to a healthy diet. Cauliflower is a good source of vitamins and minerals, including vitamin C, vitamin K, and folate. It also contains fiber and antioxidants that can help reduce inflammation and lower the risk of certain diseases. I love to cook with cauliflower because it is so versatile.

I know in the States it is easy to find frozen cauliflower but not so much here in Portugal. Today I took 1/2 head of fresh cauliflower and made it into cauliflower rice in 3 seconds in my Bimby/Thermomix. This machine blows my mind every day. You can easily make it fresh in a food processor too. I think the benefit to using fresh verse frozen is that you do not need to squeeze out all the water.

Savory Cauliflower Pancakes

These are a fantastic tasting, nutritious addition to any meal. In addition, these pancakes are very easy to make and only take a few ingredients. I listed what spices I used but you can add whichever spices you wish.

Equipment

  • 1 Mixing bowl
  • 1 Non stick frying pan

Ingredients
  

  • 3 cups(260 grams) Cauliflower rice I did it with fresh so I am not 100% sure it is the same amount if using frozen.
  • 1 medium Egg
  • 1/2 cup(100 grams) Shredded mozzarella cheese
  • 1/2 tsp Garlic powder Optional
  • 1/2 tsp Chili powder Optional
  • 1 dash Chipotle Tabasco Optional
  • 1 tsp Salt Optional
  • 1/2 tsp Pepper Optional

Instructions
 

  • The first thing you need to do is cook your cauliflower rice. You can either steam it or put it in the microwave for 2-3 minutes. If you are using frozen cauliflower you will need to get a cheesecloth or dishtowel and squeeze all of the water out of the cauliflower once it is cooked.
  • Next, add all the ingredients into a large bowl and mix everything.
  • Place your non stick frying pan on medium heat.
  • Lastly, add your desired amount of batter to your pan and cook on each side for approximately 4 minutes. I usually spread them out with the back of a spoon.
