Today I woke up and was so torn on what to eat for breakfast. I wanted something sweet but I wanted something filling. I thought about having a quinoa breakfast bowl but it was not making me dance inside. Eggs and jam toast crossed my mind but quickly left through the backdoor. I knew I needed something with protein as I needed a meal that would keep me full for at least 3 hours. What to eat, what to eat, the struggle was real. I do not know how people fast lol, I love food way too much.

i finally settled on this red lentil crispy waffle and I was not disappointed. It takes a few minutes to make, but well worth it. I was full and satisfied and I also knew I nourished my body with good wholesome ingredients. Here is another Red Lentil Waffle recipe I like, it is fewer ingredients but just as good.

Red Lentil Crispy Waffle

These are so good friends. You can make them sweet or savory. You can eat them for breakfast, lunch or dinner. These waffles also make a great bun for your burger or sandwich. This is a hearty waffle, it will fill you up.
If you own a high-speed blender or a Thermomix/Bimby I highly encourage you to make your own flours. I make my own buckwheat, rice, oat, almond and millet flour for a fraction of the cost and it is always fresh AND SO EASY.
PS: I never put serving sizes on my recipes because it truly matters how you use the ingredients. Sorry

Equipment

  • 1 waffle maker
  • 1 blender or high speed mixer NOT a food processor

Ingredients
  

  • 1/2 cup red lentils I soak them in hot water for one hour
  • 1 cup buckwheat or oat flour
  • 3/4 cup white rice four you can use regular gluten-free flour blend as well, reduce to 1/2 tbsp baking soda if your blend has some in it already
  • 1 tbsp baking powder
  • 1/4 cup coconut sugar
  • 1 tbsp corn starch
  • 1 1/2 cup milk of choice- dairy or plant-based
  • 1 tbsp apple cider vinegar
  • 2 tsp real vanilla
  • 1 pinch salt-optional
  • 1 tsp cinnamon *only if going sweet

Instructions
 

  • Preheat your waffle maker. You need the waffle maker to be turned on high. Even if your waffle maker is nonstick give it a spray of oil. These lentils can be sticky
  • Make sure you soak the lentils overnight in cold water or 1 hour using hot water
  • Once lentils are soaked, strain them and rinse for a minute
  • Add lentils to your blender
  • Next add in your other wet ingredients: milk, vanilla and apple cider vinegar
  • Blend till you get a smooth consistency
  • Next add in the rest of the ingredients and blend for one minute, the batter should be smooth
  • Spoon your batter into your waffle maker, do not over fill it
  • Each waffle maker is different so keep an eye on it. I usually cook mine for 3-4 minutes. Someone gave me a tip once to then turn the waffle maker off and let it sit another 2 minutes. You do you
  • Once done, carefully take the waffle out and top with your favorite toppings. Mine is fruit. However today for lunch I am going to top it with hummus and sauteed mushrooms. Yum
