I am a texture person and often, pudding-like desserts make me gag, but this one hit home with me. I believe the reason I liked this one was because of the melted chocolate chips on top :-) I need me a crunch in anything I eat. I remember as a kid everyone was all gaga over pudding cups in their lunchbox. Yuck! Did you like those cups?
I can not remember where I originally saw this recipe, but I do remember changing it up a bit. Remember, crunch is key.
I have been posting a lot about silken tofu. Have you gotten on board yet? Remember, soy is not your enemy, like once thought. I would buy organic if you can as soy is a heavily sprayed crop.
This recipe is easy and looks very beautiful if you plate it in a ramekin. I would suggest using the 4 oz cups but you can use any size. The 4 oz is in my opinion the perfect dessert size. If you use this size you will get four desserts. You want to make sure and keep this dessert in the refrigerator for at least 2 hours before eating. It does not really need to setup but in my opinion it tastes better when it is very cold.
Peanut Butter Protein Pudding
Equipment
- 1 high speed blender or food processor
- 4 ramekins
Ingredients
- 1 box SIlken tofu make sure you drain it
- 1 can chickpeas/garbanzo beans drained
- 1/3 cup peanut butter
- 1/2 cup pure maple syrup
- 2 tsp pure vanilla
- 1 dash salt
- 1/2 cup dark chocolate chips
- 1/2 cup chopped peanuts
Instructions
- Add the tofu, chickpeas, peanut butter, maple syrup, vanilla extract and salt and blend until creamy and smooth. Smooth is the key word here
- Once well-blended spoon into your ramekins, and give yourself the bigger portion. Just kidding :-).
- Place the ramekins to the side and melt the chocolate in a double boiler (or microwave in 30-second intervals) Make sure you are always stirring the chocolate so it does not burn
- Once melted, take a small spoon and dip it into the chocolate. Next, drizzle the chocolate over the base in a zig-zag pattern. There is no wrong way to do this, so make it as pretty as you like. Last, take some of those chopped peanuts and add them on top of the melted chocolate design.
- Place your masterpieces in the refrigerator for at least 4 hours. If you are in a hurry the minimum is one hour in the fridge. When you take them out you are going to have the most delightful crunchy healthy dessert.
