Last night, Mike and I were craving something chocolate, but I wasn’t in the mood to sift through my recipes. Instead, I decided to head into the kitchen and see what I could whip up. My go-to dessert for a quick fix is no-bake chocolate peanut butter oat cookies. They are super easy to make, require simple ingredients, and are always a hit. However, they are loaded with sugar and butter, which can be quite unhealthy. While there’s a time and place for such indulgences, last night wasn’t one of them.

Here’s what I came up with: a version that’s very similar to the original, but without the excess sugar and butter. This means they won’t be as rich or sweet, but they are still tasty, and if you’re trying to cut back on sugar, I recommend giving them a try. The recipe yields just enough cookies for a day or two. 😊

“Healthier” No Bake Chocolate Oat Balls

Treats do not have to be evil. Give yourself a chance to wean off all the sugar-laden treats out there. In time, your body will come to require less and less sugar and you will be blown away.

Equipment

  • 1 Parchment Paper Sheet

Ingredients
  

  • 1 cup gluten free oats Whole Oats work better than Quick Oats
  • 3 tbsp peanut butter
  • 3 whole pitted dates, ( chop them into small pieces ) use coconut shreds if you don't like dates
  • 1/3 cup milk I used coconut milk
  • 1/4 cup maple syrup
  • 1 tsp real vanilla
  • 1 tbsp unsweetened cacao or cocoa
  • 1 pinch salt

Instructions
 

  • Pull out a sheet of parchment paper and lay it on your counter.
  • Next get a saucepan and place it on your stove over medium-high heat,
  • Whisk together the milk, maple syrup, cocoa/cacao powder, vanilla and salt until well combined.
  • Bring to a rolling boil, once it reaches a rolling boil, stir it for 2 minutes.
  • Now take the pan off the heat and mix in your oats, peanut butter, chopped dates/coconut shreds.
  • Once everything is well combined, get a spoon and dig into the mixture and make whatever size balls you want :-) I like to make bite-sized balls. ( this is sounding so wrong lol )
  • Place your balls on the parchment paper and let them cool. Store these beauties in the refrigerator.
