I love ice- cream. I do not care if it is dead of winter, I still want ice cream. I recently purchased a ninja creami machine and use that for 90% of my creations but this is still one of my favorites to do by hand recipes. It is so easy and you can play around with the ingredients. The recipe below is the basic makeup, but feel free to add anything that suits your fancy. Be aware if you add a lot more liquid ingredients it might not freeze well.


  • 2 cans (28 ounces total) of full-fat coconut milk (refrigerated overnight)- Must be the canned kind.
  • 1/2 cup sweetener (such as maple syrup or honey)
  • 1 teaspoon vanilla extract
  • Optional add-ins: chopped nuts, chocolate chips, fruit puree, cocoa powder, matcha green tea, gluten-free granola


  1. Place the cans of coconut milk in the refrigerator overnight. This helps the coconut cream separate from the liquid.
  2. The next day, open the cans of coconut milk without shaking them. Scoop out the thick coconut cream into a mixing bowl, leaving the liquid behind (you can save the liquid for other recipes or discard it).
  3. Using a hand mixer or a stand mixer, whip the coconut cream until smooth and fluffy.
  4. Add the sweetener and vanilla extract to the whipped coconut cream. Mix until everything is well combined and smooth.
  5. At this point, you can add any additional flavorings or mix-ins you desire, like chopped nuts, chocolate chips, fruit puree, or cocoa powder. Fold them gently into the mixture.
  6. Transfer the mixture to a freezer-safe container, cover it, and freeze for at least 4-6 hours or until it reaches the desired consistency. You might want to stir the ice cream every hour or so during the freezing process to prevent ice crystals from forming and to keep it creamy.
  7. When ready to serve, take the ice cream out of the freezer a few minutes beforehand to allow it to soften slightly for easier scooping.

This dairy-free ice cream is a great base for experimenting with different flavors. You can adjust the sweetness or add your favorite mix-ins to create a variety of delicious treats! My favorite mix-ins are gluten-free granola and matcha green tea.
