I never liked the taste of sour cream. It is strange because I love Mexican Food in a BIG way, but I never used sour cream on anything. Since cutting back on dairy, I have been playing around with different recipes and stumbled on the idea of dairy-free sour cream. I gave it a whirl and I am in love. I won’t get into the whole. Is it really sour cream if it does not have dairy in it? You have heard me go down that avenue before. Let’s just call it dairy-free sour cream and leave it at that :-)

I love cashews and we buy them in bulk every time we visit Costco. Yes, they have calories but they also have FLAVOR and nutrition in them. This is really worth trying if you are trying to cut back on your dairy. You do need a high-speed blender or a Thermomix/Bimby. I would also not skip soaking the cashews.

As a reminder, cashews:

  1. Healthy Fats: Cashews contain heart-healthy monounsaturated fats, which can help lower bad cholesterol levels.
  2. Protein: They are a good source of plant-based protein, making them a great choice for vegetarians and vegans.
  3. Vitamins and Minerals: Cashews are rich in essential minerals like magnesium, copper, and zinc. Magnesium is important for bone health, while copper helps with iron absorption and maintaining healthy blood vessels.
  4. Antioxidants: They contain antioxidants such as phenolic compounds, which can help protect the body from damage caused by free radicals.
  5. Fiber: Although not exceptionally high in fiber, cashews do provide a decent amount, which aids in digestion and helps maintain a healthy gut.
  6. Calories: Cashews are calorie-dense, so moderation is key if you’re watching your caloric intake, they do add up quick ;-)

Dairy_free Sour Cream

This stuff is really yummy I promise

Equipment

  • High Speed Blender

Ingredients
  

  • 100 grams cashews soaked in boiling water for at least 15 minutes
  • 1/2 cup water
  • 1 tbsp apple cider vinegar
  • 1 tbsp nutritional yeast
  • 1.5 tsp fresh lemon juice
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp onion powder
  • 1/2 tsp white pepper Only use WHITE pepper

Instructions
 

  • Make sure you soak your cashews for at least 15 minutes in boiling water
  • Drain your cashews then add them to a blender along with the rest of the ingredients
  • Blend on high for at least 1 minute or till you achieve a smooth consistency
  • Store in a glass jar in the refridgerator and use this yummy sauce within one week
