I am going to lead with Mike liked it lol. You all know how I feel about calling dairy-free “cheez ” cheese. This is why I call it cheez, it is not a typo :-)
I know I might drive you crazy ( I do Mike all the time on this subject ) always trying to make things healthier but I truly LOVE vegetables and I love being creative with them. I still love a good full-fat cheese sauce on occasion or a big-ass chocolate chip cookie made with refined sugar but I try and limit those goodies. I LOVE to eat so if I did not try to find ways to make it healthier I do not want to even imagine how large my ass would be.
This sauce is uber easy because I used things from my freezer so there was no chopping. Do not worry to much about the measurements. A little more cauliflower or garlic will be ok. If you love onions, go for it. The only thing I would not overdo is the tamari and broth. Do not skip the smoked paprika or nutritional yeast. These two give it a great flavor. Try and get non-fortified nutritional yeast if you can. It is harder to find but the fortified kind has some synthetic b vitamins which I don’t think are good for you and alter the taste. This is my favorite brand and this is my second favorite.
Cauliflower Cheez Sauce
Equipment
- 1 roasting pan
- 1 High Speed Blender
Ingredients
- 1 bag Frozen riced cauliflower
- 100-200 grams Frozen chopped onion 1 medium onion ( I used 150 grams )
- 15-20 grams Frozen chopped garlic 3 cloves ( I used 15 grams )
- 1 cup Veggie stock/broth
- 1/4 cup Nutritional yeast Try and get non fortified if you can
- 2 tbsp Tamari sauce Coconut Aminos works well too
- 2-3 tsps Smoked paprika
- 1 medium Jalapeno deseeded
Instructions
- Preheat your oven to 400 degrees ( 204c )
- Next line a baking tray with parchment paper
- Arrange your cauliflower rice, garlic, onion, and jalapeno on the pan trying not to overlap anything
- Bake for 20 minutes. You do not want the veggies to be burnt, but having them a little golden brown provides a fabulous flavor
- Lastly, place all the ingredients from the pan in a high-speed blender along with the rest of the ingredients. Add the broth a little at a time, this way you can decide the consistency you want.
- Use this very healthy Cheez sauce as a dip, over veggies or anything that makes you happy. We love it on potatoes. :-)
