The weather is starting to reach a perfect temperature here in the Algarve, and that can only mean one thing: it is picnic time! We love this time of year; it is not too hot and not too cold, just right for Mamma and Papa Bear :-)
When the weather hits that sweet spot for us, we enjoy nothing more than packing lunch and finding a new beach spot to explore. It was 80 degrees here today, so a picnic is planned for tomorrow. (Edited the next day: OMG, we went to a new beach spot. The weather was amazing, the potato salad was delish, and unbeknownst to us, we parked our chairs smack in the middle of a nudest beach! It is never dull here in Portugal.)
The menu is Dairy-Free Maple Dijon Potato Salad, and I am going to make Chef AJ’s famous Goodmans Peanut Chews for dessert. I love making potato salad because it is so easy, it is a great resistant starch, and you can get so clever with different dressings. I hope you will try this recipe out! Dairy-Free Maple Dijon Potato Salad
Ingredients
- 2 lbs potato's Any variety you want
- 1/4 cup diced celery
- 1/3 cup diced red onion
- 1/4 cup chopped black olives
- 1/4 cup chopped pickles or relish
- 2-3 tbsp dill fresh or dried works here
Dressing
- 1/2 cup cashews
- 1/2 cup hemp seeds
- 4 cloves garlic
- 2 tbsp dijon mustard
- 2 tbsp apple cider vinegar
- 1 tbsp tamari coconut aminos works too
- 1-2 tsp liquid smoke- hickory or chipotle usually near the barbeque sauces. I use this stuff in everything
- 1 tbsp pure maple syrup
- 1/2 cup water
Instructions
- Cook your potatoes however you like to but make sure they are fork-tender. I like to steam them in my bimby for about 35 minutes or pressure cook them in my ninja foodi for about 12 minutes.
- Set potatoes aside so they can cool.
- Throw all your dressing ingredients into a high-speed blender or whatever mixing device you choose. You are looking to achieve a smooth consistency.
- Grab a large bowl and add your cubed potatoes, and all the other salad ingredients. Pour your dressing over the salad slowly so you do not over dress your salad. Nothing sucks more than soggy potato salad. If you have leftover dressing save it to pour over a green salad.
- Remember this is potato salad your way. If you don't like olives, leave them out. If you are a green onion gal use those instead of red. The only thing I would not mess with is the dressing. Feel free to use more or less garlic but make sure you include all the ingredients to ensure the flavor profile.
