All I can say is where have you been all my life Buckwheat Bread??????? I have been eating gluten-free for over 20 years and never have I heard of one ingredient buckwheat bread. This bread has a slight sourdough taste to it due to the fermenting process.

The key to making this bread yummy is using whole buckwheat groats and also being patient. This bread takes 2 days to ferment. Trust me it is worth every minute you have to wait. If you want to add in any spices make sure you do it after the 12-24 hour ferment process. I only add salt. Before I put it in the oven I add some sunflower seeds and sesame seeds on top ) I bake it in a silicon pan.
This is the recipe post I followed to make the bread. She was a pure genius in creating this recipe. LOL recipe is a stretch as it is just water and buckwheat groats. ( In Portuguese buckwheat groats are spelled grumos de trigo mourisco )

Hi Judy, I will reach out. Mostly I just skip bread but have been having some success with King Arthur GF flour. I don’t get great results in my bread machine. The GF recipes don’t seem to rise enough. I have made some bricks.
Hey Gloria, GF backing is tough and because gluten is what gives bread its fluffyness it is hard to reproduce. However, stick with it, I promise there is hope ;-) This bread is unique because the only ingredient is buckwheat. It wont create a sandwich style bread but it really has fabulous flavor and is so good toasted with some butter or jam. Remember when you are making GF bread you must let it cool completely before you cut into it or it will create more brickness.
