Whew life has been a little busy lately my friends and I am behind in my postings.

Mike and I eat a lot of bananas. ( despite them being radioactive lol ) As most of you probably experience at this time of year, those yellow little bananas turn brown very quickly in the heat. We do a lot of banana ice cream, so most of the time the bananas never go to waste. However, we just purchased some bananas during our day adventure to Costco Spain and so we had ooodles of bananas gone bad.

What better thing to do with sweet ripe bananas than make banana bread. The wonderful thing about making banana bread is you do not have to add sugar since those brown bananas create such a natural sweetness. This recipe did have a tad of maple syrup but it was very tiny. I love that it did not require any eggs or oil. If you do not have oat flour remember you can easily grind your own from oats in your high-speed blender. I doubled the recipe so it would fit in my bread loaf pan. I also added cacao nibs and chocolate chips for Mike :-).

PS The bread was gone in 1 day!!!!! I hope you try this recipe and follow Alexandra for more healthy ideas.
