This morning I was aching for something sweet but was feeling lazy and not in the mood to get involved in the kitchen. I decided to whip up some of my No Bake Apricot Coconut Bites. Within 10 minutes I was on my couch, coffee in the mug and my yummy bite in my hand. It was a fabulous way to start the day.
Here is the thing about me in the kitchen, 85% of the time I try to make my recipes work for me, not against me. What this means is I always try and make things that have a good nutritional bang. Of course, I am not always this gung ho and am known from time to time to crank out a high-calorie chocolate-packed cookie but today that was not the case.
Today the recipe included two tasty nutritional goodies. I have loved apricots since I was a little kid and who does not love coconut? Oh yes, my daughter Kellie is not a fan of coconut. Sorry Kell, these would be a pass for you.
Dried coconut, also known as desiccated coconut, offers several health benefits. It is a good source of fiber, which can aid digestion and promote a feeling of fullness. Dried coconut also contains healthy fats and minerals, making it a nutritious addition to your diet. However, keep in mind that coconut is not low in calories and it is high in fat so try not to binge these babies. It’s all about balance :-)
Apricots are a great source of vitamins A and C, as well as dietary fiber and antioxidants. These nutrients can support eye health, boost the immune system, aid in digestion, and promote healthy skin. Additionally, apricots contain potassium, which is beneficial for heart health and regulating blood pressure.

No Bake Apricot Coconut Bites
Equipment
- 1 Food Processor
Ingredients
- 300 grams Dried apricots
- 100 grams Desiccated coconut
- 500 grams Pitted dates
- 1 tbsp Honey or Maple syrup
Instructions
- Place all your ingredients in your food processor and blend till everything is mixed together well.
- The batter should be moist but not wet. Using your hands or a small ice cream scoop gather your batter and roll it into a ball. If your batter is dry add in a little more of your sweetener, if it is wet add in some more coconut.
- If you are interested in jazzing these bites up you can roll them in your favorite topping. Examples are hemp seeds, coconut, and crushed nuts.
